Hey guys! So, there is one thing that you should probably know about me. If you give me a hot delicious quesadilla, I. Will. Love. You. Forever. I promise! To me there’s nothing better that taking a bite a hot, cheesy quesadilla and having a party on your taste buds, because of all of the flavors combining together.

When I took my first bite, it was then that I knew what love was… okay maybe I’m exaggerating just a tiny bit, but it was still delicious! Through the process of making these quesadillas several different times I discovered that the BBQ sauce is absolutely the star of this show. Now, I’ve tried this recipe with Hickory BBQ sauce and Original, and hickory gave me an extra dose of flavor that the original one didn’t.

Most of the times when I get home from class I’m exhausted. The last thing I want to do is spend an hour cooking a meal. So I found that this go to meal is perfect for when I’m short on time and when I don’t want to fork over the cash for fast food. My mouth is currently watering right now just thinking about these quesadillas and I can’t wait for y’all to try it!

Sweet and Spicy BBQ Chicken Quesadilla

Sweet, spicy, and cheesy barbecue chicken quesadilla that is as quick to make as it is delicious.

  • 1 cup Shredded rotisserie chicken
  • 2 large burrito style tortillas
  • 1/4 cup chopped red onions
  • 1 cup shredded Mexican cheese
  • Sour cream (optional)
  • Salsa (optional)
  • BBQ sauce
  • 1/4 cup Franks red hot sauce
  • 1 teaspoon distilled white vinegar
  • 1/4 cup honey
  • 1/2 teaspoon garlic powder
  • 1/2 cup hickory smoke barbeque sauce


  1. In a small bowl mix together the ingredients for the barbeque sauce. Add the chicken and coat evenly
  2. Grab a tortilla then sprinkle a layer a cheese, chicken, red onions, and another layer of cheese. Fold over and grill on each side at medium high heat for 2-3 minutes until cheese is completely melted.
  3. Cut into slices and enjoy with sour cream and salsa.


• If you are cooking the quesadilla on stove top making sure the temperature isn't too high. If it is the outside will cook quicker than the cheese can melt • Instead of cooking quesadilla on stove top you can bake it in the oven for 10 minutes at 400 degrees. Flip it over after 5 minutes so that the other side can be nice and crispy too. • The amount of hot sauce add can be changed based on how hot you want it.
